We're planning on making chicken stew for 1,000 homeless people. We were thinking of buying chicken braai (Afrikaans for grilled meat) packs, packets of mixed veggies, potatoes, and brown onion soup. Any idea on the ingredients to use and what quantities?
Or perhaps other ideas on something simpler, etc.
Any advice welcome.

Wow! You are taking on quite a project! You will definitely need to cook these in quantity according to your cooking vessel size. Soup will go along way and you can even stretch it further if needed. You need to figure 5 gallon finished soup/100 people so about 50 gallon total. Your idea of packaged already prepared meat and veggies will help you out tremendous. Keep in mind that if you include a pkg of chopped or sliced onion-peppers it will help flavor your soup.You may want to do a trial batch to test your flavors and consistency. Soup can be made out of about anything so unless you have a specific recipe you plan to use, here is my suggestion for ingredients according to what you have already mentioned.
You will probably have to cook this in batches of maybe 100 servings unless you have cooking containers for larger amounts .
this is a very good site that we use a lot as it has some marvelous economical meals including all ingredient lists for servings of 100. maybe you can get some ideas or something similar to what you are thinking.
