I think an Instant Pot has been a great investment. Especially when you can get it used or as a gift, you will save a lot of time and eat lots of good meals. Here's a great recipe for hard boiled eggs. Best part is, they peel straightaway!
Prep Time: 20 minutes
Cook Time: 3 to 7 minutes
Ingredients:
- 1 cup water
- 6-12 large eggs
- 1 Tbsp vinegar
Steps:
- Add the water and vinegar and put metal trivet into the pot, then carefully add the eggs on top of the trivet.
- Select manual setting; adjust pressure to high, and set time for 3-7 minutes. If you like soft-boiled. 7, if you like firm and fully-cooked eggs.
- When finished cooking, quick-release the pressure immediately by moving the pressure dial forward and being careful not to burn yourself!
- Cool the eggs in a bowl of ice water for 1 minute. Drain well and peel.

If you're doing this, they sell stainless mesh baskets that fit inside the instant pot. It would be a lot easier that trying to catch eggs rolling on a trivet.

Agreed, but it's cheaper to just use a plastic bag. Cut a hole in the two corners to drain any water that might collect in the bag. After cooking, simply pull the bag out with the eggs.
And put the bag in the ice water if you wish. The bag can be reused again and again. Virtually all food grade bags will easily survive the 230F that electric pressure cookers reach.
