This is one of my family's favorite recipes. The meat comes out tender and fragrant. As a note, I use heaping tablespoon measurements for the garlic, shallots and lemongrass. My husband loves chicken with bones and my kids like boneless so I do half and half for this recipe. If you don't add bones, I would add a tablespoon of Better Than Bouillon chicken broth.

This sounds so good; I would never have thought to do it in the instant pot but all the ingredients are right on (I might add some kaffir lime leaves; we have 2 trees so we use it in a lot of Thai dishes). This sounds like it comes together and I have it all including the mushroom seasoning so I hope to remember to post back after I make it. I only used the instant pot one time in the 18 months we have had it.
