Brown ground beef and onion; drain off fat. Stir in tomato sauce, parsley, oregano, basil, 1/4 tsp. salt, and pepper. Simmer uncovered 10 minutes, stir occasionally.
Prepare noodles according to package directions; drain. Mix together cottage cheese, Monterey Jack cheese, eggs, spinach, parsley, garlic salt and pepper in a large bowl.
