Silver Post Medal for All Time! 355 Posts This is a Fall favorite. It is so warming and delicious with lots spices and flavors. Enjoy making this very easy soup.
Yield: 6 - 7 quarts
Ingredients:
- 2 lb Jones sausage meat (frozen)
- 2 (32 oz) cartons chicken broth
- 3 (14 oz) cans diced tomatoes
- 1 medium sweet onion, minced
- 2 stalks of celery, minced
- 4 - 6 cloves garlic, minced
- 1 medium green pepper, minced
- season to taste; start with an 1/4 tsp of each then adjust after doing a test taste.
- salt, black pepper, minced garlic , parsley, basil, thyme, marjoram, rosemary, old bay seasoning, 2 Bay leaves and 2 tbls sugar.
- 1 (8 oz) bag baby spinach
- 1/2 cup Orzo pasta (rice shaped pasta)
- grated cheese (opt) to top the bowl of soup.
Steps:
- Using a large soup pot, start by opening the rolls of sausage and scramble the sausage until it is all broken up.
- Add all minced vegetables and stir in and cook.
- Add all seasonings onto the meat mixture.
- Add the chicken broth, stirring in, add tomatoes, stirring in well. Let this come to a boil, then down to a simmer. For about an hour.
- Then add spinach and Orzo. Let cook until pasta is tender. Then it can be served. Or shut it off and cover it. It can be served with a bit of grated cheese.
