Cook Time: 20-25 minutes

Ingredients:
- 2 cups flour (I used whole wheat)
- 1/4 cup sugar (I substituted half the amount of stevia)
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1 beaten egg
- 1 cup milk
- 1/4 cup oil
- 12 tsp jam (I used half of that)
Steps:
- Preheat oven to 425 degrees F.
- Mix ingredients together. The batter will be lumpy.
- Spoon into greased muffin cups 1/4 full.
- Add 1 tsp. jam on top of the batter for each muffin.
- Top with more batter so each muffin cup is 2/3 full.
- Bake 20-25 minutes.
- Remove from cups and cool on wire racks.
