My birthday is coming up and I was thinking of doing a Japanese themed party. I have so many friends that hate sushi. I love sushi!

For those who don't like sushi, the fish kind, make candy sushi. Google for recipes. The kids I know loved the sweet sushi.
Sushi is a great idea, especially if you love it, but for those who don't like it there are many other Japanese foods that are popular: teriyaki chicken, vegetarian sushi, steamed edamame beans with soy sauce, miso soup, yakisoba, even ramen.
You can also play around with a more specific theme. A Hello Kitty party might be really cute, you could do something edgier with anime characters, or you could go old school and show old samurai movies.
