The basic Jello parfait recipe is simple. It is basically your Jello mix, fruit, water and Cool Whip.
I would suggest using a large ice cube tray to make your bite size pieces. Also cut your fruit into smaller pieces.
Place your fruit in each slot of your ice cube tray. Afterwards, mix the 1 cup of boiling water to your Jello mix. Stir well until dissolved. Add 1 cup of Cool Whip to the Jello. Mix well and spoon over the top of your fruit in the ice cube trays. Put the trays in your refrigerator for 1 hour. Pop the cubes out and enjoy.
The above recipe is a good one. However, when I do them I don't use an ice cube tray. Instead, I use a lightly oiled cake pan, then cut into squares.

Strawberry Jello Parfait
INGREDIENTS:
1 package (3oz) Strawberry Jello-o
1 cup sliced fresh strawberries (optional)
1 cup thawed Cool Whip whipped topping
DIRECTIONS:
Prepare Jello-o according to package directions. Set aside 1/3 cup.
Add fruit to remaining Jello-o and spoon into 4 to 5 dessert or wine glasses. Chill glasses at an angle until jello is set (overnight is best) Fold whipped topping into remaining (1/3 cup) jello-o. Refrigerate until ready to use.
Spoon topping mixture into glasses of set jello. Top with a dollop of Cool Whip, and garnish with fresh strawberries. Keep chilled until ready to serve Chill
