Juicy Pear Cake

A piece of Juicy Pear Cake with whipped cream on top.This delicious cake is laced with the flavours and textures of perfectly ripe pears. Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Yield: 9 servings

Supplies:

  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 2 eggs, beaten
  • 1/2 cup oil
  • 1 tsp vanilla
  • 2 cups flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 cup milk
  • 3 ripe pears
Ingredients for Juicy Pear Cake.
 

Steps:

  1. Preheat oven to 350F. Mix together sugars and eggs.
  2. Mixing egg & sugar.

  3. Stir in oil and vanilla.
  4. Mixing up the cake batter.
     
  5. Mix together flour, salt, and baking soda. Stir into wet ingredients.
  6. Mixing up the cake batter.
     
  7. Fold in cinnamon. You want the batter to be a cross between a cookie batter and a cake batter. Because these batters can turn out so differently at this point, either stir in a bit more flour to thicken, or add milk a tablespoon at a time to thin out.
  8. Mixing up the cake batter.
     
  9. Chop up pears. I like mine a medium-large dice.
  10. Cubes of fresh pear.

  11. Fold pears into batter.
  12. Mixing the pears into the cake batter.
     
  13. Lightly grease a 9 x 9 in. baking dish (or similar) and pour in the batter. Bake for about 40 minutes, until cake is super golden.
  14. The unbaked cake in a pan.
     
  15. Allow to cool a bit and serve warm, if desired. You can also serve fully cooled. Goes great with cream or vanilla ice cream.

When I was younger my grandmother made a great pear cake. I loved this cake and have made it several times. The one that she made was done with canned pears and you used the juice to make the batter of the cake with.

I have not made one of these cakes in years and now I really want to make it again.
