I just finished all of my puppies shots; he is now 16 weeks old and has a good immune system. The vet said I can walk him so I took him for a walk and he sniffed another dog's poop. I pulled him away from it because I still don't want to have the risk of him getting sick from anything! Will he be alright? I have been very cautious. I carried him everywhere even though he is almost 30lbs and I never let him touch the ground.

I understand your concern for your dog and not wanting him to be near any dog that has the sickness. However, carrying him around won't do much good because you can pick up the sickness on your shoes and bring it home with you.
I know people whos dogs never leave their yards and still got sick. A friend would visit who ended up walking in a place another dog was sick and carried the germs home with them.
Starting the dog's shots at 6 weeks is the best way to prevent your dog from getting sick. I have a large number of dogs here and I still had 2 of my dogs who got sick with Parvo, but it didn't affect my other dogs.
Your dog should be fine as long as you have all the shots. Normally on a puppy, I have to get the dog a series of shots that are 8 weeks long. They give the puppy different shots every 2 weeks. The very first shot they give my puppy is for parvo, then 2 weeks later it is a vaccination and again parvo and again a vaccination.
If he finished his shots he should be ok. Of course, I would not purposely take him to a place where I knew a sick dog had been

Getting the shots is the best defense. A good relationship with a vet, which it sounds like you have is critical! A good food is also helpful! Ask your vet for one that will meet the pup's needs the best!
To protect against illness, I have ALWAYS avoided dog parks and for many years I also avoided kenneling my kids (my late Carmel lived to 17 1/2 with this mentality...so I think it works!).
We also also always keep (kept) the pups on our lap at the vet's office and avoid contact with other dogs at all costs (this is two fold...as neither of my kids were/are much for other dogs anyway so it is a safety first thing!)

So typing this out...I realize I am truly a helicopter pet mom...but since I don't have human kids...and my kids can't talk...I do put their safety at the top of my prioorty list :)

so my dog 25 years ago got parvo and somehow made it the worst he had his whole life was that his teeth were damaged but other than that he lived to 20+ years of age
so saying at some point you have to have trust that the dog's immune system will take over and keep him well even if he did get something, especially if he's had his shots
I think your instincts are good in wanting to protect your dog. Once his vaccinations are complete he needs to be able to run and play and exercise. If he is exposed to something he has been vaccinated for he will be safe. Rarely a dog will come down with something he has been vaccinated for. When it happens, the illness is usually mild and short. Enjoy your baby.
