I am remodeling and my kitchen/living room will all be open. My walls are rustic pine and my cabinets will be wormy chestnut with an old cast iron sink (white). I am not sure what kind or color of counter tops to use. I would love to see some photos or ideas/suggestions please.

I think white would be beautiful with the dark cabinets. Walls could be a pale yellow.
I would do a dark reddish granite color or a stained concrete in a dark reddish shade. I would love to see a picture when you are done.
Sounds really cozy are you going with country style or more modern?
I personally think a lighter shade of mixed beige and white would look nice and there are many counter tops available in these colors.
If country is your style why not go with country style curtains, pot holders, food or flower pictures, etc and maybe a hanging pot rack?
Most photos are going to be very high end kitchens but some may give you an idea for what "mood" you wish to create.

With rustic pine walls and chestnut cabinets that brings a lot of dark, natural elements in so I would definitely go with VERY light on countertops. Some good choices are white quartz, light gray granite, light polished glass countertops or poured concrete countertops in a lighter shade.
The floors are going to be epoxy this summer and leaning towards a color that don't show dirt bad at all
