Diamond Post Medal for All Time! 1,298 Posts This is a main courses that is easy to prep, marinate and toss it in the oven. Very suitable to make especially when hosting a small get-together. This boneless lamb roast is delicious and pairs well with side of roasted vegetables and garlic bread.
Prep Time: 10 minutes
Cook Time: 1 1/2 - 2 hours
Yield: 6-8 people
Ingredients:
- 5.5 lb lamb leg boneless roast
- 6-8 cloves garlic
- 1 Tbsp salt
- 1 Tbsp rosemary
- 1/2 tsp black pepper
- 2 Tbsp extra virgin olive oil
Steps:
- Prep rub ingredients by chopping rosemary and garlic. Add to a bowl with salt and black pepper. Mix ingredients.
- Pour olive oil in and mix.
- Open lamb roast and rub in your marinate.
- Tie lamb up and rub the remaining marinate on the outside.
- Preheat your oven to 350°F. Roast lamb in the middle of oven for about 1 1/2 hours or longer until internal temperature is 130°F. *Time varies depending on your oven and weight of lamb. I used a thermometer. Once the roast reaches 130°F, take out and allow lamb to rest before cutting.

Since boneless leg of lamb is kinda costly, this recipe would work very well with boneless pork loin.
