I don't like ricotta cheese, so I had to come up with something because we love lasagna!
Fry hamburger and onion together until done, add salt, pepper, and garlic salt to taste. Meanwhile put on lasagna noodles, bring to a boil, and cook until done. Add salt and extra virgin olive oil to noodles while boiling.
When hamburger, onions, and noodles are done, mix hamburger, tomatoes and jar of spaghetti sauce together. In baking dish layer noodles, then hamburger mixture, both kinds of cheese then mushrooms.
Repeat using all ingredients until top layer is noodles, depending on baking dish size this should make about 4-5 layers. It will feed a family of 5 or 6 people.
My family including my small grandchildren loves this recipe.

Instead of cheddar, try cottage cheese with shredded mozzarella and parmesan cheeses. (09/01/2010)

I don't know if anyone else has said, but you don't have to cook the lasagne noodles separately. I put mine, dry, and, by the time the dish is done, so are the noodles. This saves me time and aggravation (not to mention no dirty pot). (09/02/2010)
