Lazy Cake

piece of cakeIt was super late, when the kiddos and I had a sweet tooth. I was tired and feeling lazy, thus the name. I wanted something super easy and quick, but we were out of everything. I had a cake mix, chocolate chips and pumpkin. Not even any eggs! I have to say this turned out even better than if I had made it the usual way. You actually don't really taste the pumpkin, but it made the cake extremely moist without any oil.

We poured some milk over the top and voila! Our lazy cake was awesome. Hope you try it. I think you'll like it.:)

Total Time: A few minutes prep

Yield: 13" by 9" pan

Ingredients:

Steps:

  1. Preheat oven to 350 degrees F. Add your cake mix, pumpkin and water to a large bowl.

  7. Spread into a greased 13" by 9" baking dish.

  9. Bake at 350 degrees F for about 30 minutes.

I'm willing to bet that most people would be more likely to have eggs (and flour) at home than a can of pumpkin puree or even a box of cake mix.

Never would've thot of pumpkin.....but I do know that you can use mayonnaise in a pinch (or even on purpose!) Keeps things moist! FYI....Marianne Collier

Hahaha...I like the name and voted for you! Here's an EVEN LAZIER idea!
I just used chocolate cake mix (moist kind) plus 1 cup pumpkin puree (NOT pumpkin pie mix)..mixed together.

Place in a greased pan, 375 for 20 minutes. Wa-La!
I personally added walnuts and chia seeds to the top to make it healthier? or at least that's what I told myself when I ate 5 pieces! Delish!

Hahaha...I like the name and voted for you! Here's an EVEN LAZIER idea that creates a chocolate brownie with only two ingredients...very similar to yours!
I just used chocolate cake mix (the moist kind) plus 1 cup pumpkin puree (canned although I used a cup I pureed from last years pumpkin from the garden...and NOT pumpkin pie mix which has lots of added stuff)..mix the puree and box mix together. It will be dry. I used my hands.

Place mix in a greased pan, 375 for 20 minutes. Wa-La!
(I personally added walnuts and chia seeds to the top and after it was cooked Iplaced a dollop of organic light sour cream (or you can put vanilla yogurt or ice cream if you'd like to 'fancy' it up.) to make it healthier? or at least that's what I told myself when I ate 5 pieces! Delish!
