Diamond Post Medal for All Time! 1,298 Posts This delicious and moist cake is perfect to serve for any occasion! You cannot go wrong with this Lemon Raspberry Blueberry Cake.
Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 1 hour
Yield: 1 loaf
Ingredients:
- 1 1/2 cup whole wheat pastry flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup sugar
- 1 cup Greek yogurt
- 1/2 cup olive oil
- 1/2 tsp vanilla extract
- 1 cup frozen raspberries
- 1 cup frozen blueberries
- 2 tsp grated lemon zest
- 3 eggs
- 1 Tbsp chia seeds*
- 1 Tbsp flax seeds*
Steps:
- In a bowl, add your dry ingredients (flour, baking powder, salt).*
- In another bowl whisk olive oil, vanilla extract, eggs, greek yogurt, sugar, and lemon zest.
- Slowly incorporate dry ingredients to wet ingredients and whisk.
- Then slowly incorporate your fruits. I used frozen blueberries and raspberries.
- Line loaf pan with parchment paper and bake at 350 degrees F for about 50 minutes, or until ready. Allow to cool down before serving.
*Optional: Add chia seeds and flax seeds.
