Lentils and Quinoa with Shiitake Mushrooms, Tomatoes and Spinach in bowlThis is a quick, easy and nutritious meal to make. You can opt for other vegetables and customize to your liking.

  1. Dice white onions.
  2. Cook quinoa and lentils separately. Follow the instructions for boiling. Depends on how many people you are serving and your preference.

  4. While the lentils and quinoa are cooking, use a large pan; add olive oil over medium heat. Add diced white onions and caramelize.
