Here is a way to make good use of leftover mashed potatoes. Add a handful of ingredients to the mash and make little muffins that taste like loaded baked potatoes. They make a fabulous snack or side to a dish! If you don't have a mini muffin tin, you can make fewer of the regular size.
Prep Time: 10
Cook Time: 20
Total Time: 30
Yield: 12 small muffins
Ingredients:
- 3 pieces bacon
- 1 cup mashed potatoes
- 1/2 cup grated cheddar cheese
- 1 Tbsp chopped green onions or chives
- 1 cup flour
- 2 tsp baking powder
- 3 Tbsp cream cheese
- 1/4 cup milk
- 1 lightly beaten egg
- 1/4 tsp salt
- 1/2 tsp ground black pepper

Steps:
- Preheat oven to 350 degrees F. In a pan, cook bacon until crispy. Drain.

- Coarsely chop the bacon.

- In a large bowl, mix flour, baking powder, salt and pepper together.

- Add bacon, green onion or chives, most of the cheddar (leave some for the tops) and mashed potatoes. Mix to combine.

- Add the cream cheese, milk and egg and stir until just combined. Do not over mix or they will have an odd consistency.

- Lightly grease a muffin tray. Spoon batter into muffin tins. Sprinkle tops with the rest of the cheddar.
- Bake for about 20 minutes. (I used a toaster oven here.) The muffins will rise and brown a bit. You can do a toothpick test to make sure they're done.
