Wow.... Long John must seriously guard their rice recipe....Rats. I was thinking about the rice and crumblies (MMMMMMMM crumblies) the other day and thought if anyone could find a recipe, it would be on ThriftyFun.
I know LJS is totally bad for me, but so yummy and I needed yummy comfort food. There is only one left in my area and it isn't close by and I had rice in the pantry so I thought I would try to make my own.
I googled and googled and thought I found a few recipes, but none seemed right. Then I found the ingredients...

No wonder it tastes so good...rice, butter, salt, chicken fat, sugar, coconut oil :) and a lot of chemicals (ICK).
I may try messing around to see if I can get it right...if I do, I will post it. Meanwhile I think my hips are thanking me for NOT finding it, as a moment on the lips is a lifetime on the hips in my world!

There's no food that is inherently "bad." The key is portion control and NOT having fried foods every day (or even every week).
1/3 cup butter1/2 medium yellow onion finely diced1 1/2 cups long grain white rice3 cups good quality chicken stock* or vegetable brothsalt & pepper to taste2-3 bay leaves
Melt butter over medium heat in large saucepan. Add in onion and saute gently for 5-6 minutes. Stir in rice grains to coat in butter.
Pour in remaining ingredients. Cover, bring to boil, then reduce heat to low and cook 5 minutes less than what is listed on rice package directions {should be about 15 minutes.}
Turn heat off rice, but keep on the hot burner for 10 minutes to steam and prevent scorching. Fluff rice with a fork, remove bay leaves, and serve as desired. Top with dried parsley flakes {optional}.
Almost taste like long John's silvers rice.
