Don't get me wrong, I love those rich and creamy sauces just like everybody else! :) I have to say though, this is actually quite tasty despite being a healthier option. My whole family loved it, and that's saying a lot! :)
Pretty, tasty, easy to make, and you won't be eating a weeks worth of calories in one sitting. Bonus!
Total Time: About 30 minutes
Yield: About 10-12 cups

Ingredients:
- 2 12 oz. boxes Tri - Color Rotini
- 1 16 oz. bottle Italian Dressing
- 4 Carrots
- 2 12 oz cans Black Olives
- 1 pt Grape Tomatoes
You can easily halve this recipe.
Steps:
- In a large pot with just a splash of oil, boil your noodles just until tender enough to eat. Don't overcook them, the end product tastes much better if your noodles are still somewhat firm.
- Drain your noodles immediately, run cold water over them to stop the cooking process. Place them in the fridge to chill while cutting your vegetables.
- Peel and dice 4 carrots.
- Cut all of your olives in half.
- Quarter your grape tomatoes.
- Place all of your vegetables in the bowl with your pasta, add your bottle of Italian dressing, mix well.
- Serve chilled. Enjoy!
