Low-Sugar Baked Apples

Low-Sugar Baked ApplesThis is a very versatile recipe I came up with for a healing retreat that I went on. It can be easily customized for specific diet restrictions and is actually pretty darned healthy! They taste great with ice cream and make an awesome sweet breakfast treat.

Steps:

  1. Preheat the oven to 350 degrees F.
  2. If you use a cookie sheet, line it with foil and fold the corners up to catch the juices. This will make clean up easier. Grease the foil with coconut oil or butter. If you use a casserole pan, you can skip the foil and just grease it with coconut oil or butter.
  3. Wash and dry apples. Remove the core with the baller, being careful to not puncture the bottom or sides the apple. Now hollow out the inside, leaving some apple on the walls of the apple to be sure it bakes properly. Set aside the apple you scooped out.
  4. Putting the apple that you scooped out (without the core of course) into a food processor. I like to leave them a bit chunky as they add to the texture.

  6. Put the chopped up apple into a bowl and mix in chopped walnuts. Then mix in the cranberries and raisins. Add cinnamon, to taste. Also add nutmeg, if desired.

  8. If you want them a little sweeter you can add a touch of honey or a pinch of brown sugar, but do it sparingly as the apples are very sweet without it!
  9. Stir in a little softened butter or coconut oil.
  10. Stuff the apples firmly but gently. I make sure to really pack them and make them mound over the top just a little.

  12. Place apples on prepared cookie sheet or in casserole pan. Bake for about an hour. Test them by poking the sides gently. If the apple is still hard it's not done. If it's soft and wrinkles when poked, it's done. If you cook it longer it will get mushy. Let cool and enjoy!
