I need to make a cake or dessert for a co-worker who is on a diet. Any suggestions?

Angel food cake with strawberries and Cool Whip on it.
Good idea, they have fat free cool whip too, that tastes wonderful. Also, you could do like a sugar-free upside down pineapple cake.
How about this recipe:
Two Ingredient Cake
Ingredients
1 (18.25 ounce) package spice cake mix
1 (15 ounce) can pumpkin
Directions
1. Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan.
I've used choc cake mix and like that a lot. I've also added a few tablespoons of water if it is just too hard to mix.
Angel Food cake is my favorite. On April 13, 2010, I posted a recipe for Gluten Free Angel Food Cake. You can substitute cake flour for the Gluten Free flour.
Mix one Angel Food cake mix and 1 large can pinapple. Mix dry cake mix with pinapple and bake in an 9x13 pan at 350 degrees until done...top with cool whip.
A meringue dessert is delicious too. You can look it up on any recipe website. Low fat, low sugar, can top it with fresh fruit, and it makes a stunning and elegant presentation.
Most cake recipes have partially hydrogenated oils, which is a toxic chemical and should never be consumed, read the labels. (and makes you fat!) Find a recipe on-line, make it from scratch, decrease the amount of sugar the recipe calls for and substitute natural applesauce for the oil (avoid anything with added corn syrups). Make your own whipped cream and top with fruit. Good luck.
Try substituting 3/4 of the oil called for in a recipe with applesauce or yogurt. You still want to use a little oil to keep the cake moist.
