Macaroni Beef and Zucchini

Ingredients:

• 2 Tbsp olive oil
• 1 box curly pasta (elbows, penne, pipite, etc)
• 1 lb lean ground beef
• 1 sweet onion, chopped fined
• 2 stalks celery, chopped fine
• 3 cloves garlic, chopped fine
• 1 green pepper, chopped fine
• (above veggies I use my electric chopper)
• 1 zucchini, chopped
• 5-6 basil leaves, slices
• 4 large beefsteak tomatoes, par boiled, remove skins, and diced
• 1/3 cup fresh Parmesan cheese
• 2 Tbsp sugar
• 1/2 tsp salt
• 1/2 tsp pepper
• seasonings to taste, garlic powder, Italian seasoning, and oregano

 

 

 

Steps:

1. Put a pot of water on for pasta, salt lightly, and add 1 Tbsp. olive oil. When water comes to a boil, add pasta. Let this simmer on low until pasta is cooked al dente.
2. While pasta is cooking, heat a large skillet. Add 1 Tbsp. olive oil, and brown the ground beef. Add all chopped veggies and stir well.

3. Add fresh diced tomatoes. Stir in well. Add the Parmesan cheese, and all remaining spices.

 
4. Strain pasta. Keep a bit of pasta water and toss pasta in the beef mixture and turn off the heat. Mix and toss well.

 
5. Serve with a spoonful of shredded Parmesan or other grated cheese.
