My husband signed me up for cold macaroni salad for his work's Thanksgiving luncheon. I make very boring cold macaroni salad - so it hasn't been made by me in years. Normally, I'd make it like potato salad: celery seed, diced onion, cooked macaroni al dente, Miracle Whip, a couple of hard boiled eggs.
Any suggestions?

My macaroni salad eats like a meal lol I dont measure but Ill try here.
Regular small box of macaroni or spirals.
4-5 celery stalks sliced thin.
medium onion chopped (we like it med size)
4-6 boiled eggs chopped (reserve few slices for top)
1/2 sm jar sweet pickles sliced
1/2 sm jar dill pickles sliced (if desired --I do
few handfulls of olives sliced
shaved radishs to make it pretty
shaved carrotes to make it pretty
Shredded cheese if desired (but if theres leftover cheese makes it mushy) I dont add it
Dressing
Salad dressing .. (I dont use miracle whip unless its on sale theres really no difference in taste.
I dont measure I just mix by looks and taste.maby 1/2 jar.. ???
celery seed according to amt of salad dressing used
1/4 to 1/2 cup sugar
1/4 to 1/2 cup vinegar (or lemon juice I usualy use lemon juice)
then start on one side turning dressing over a couple times going around the bowl.. when you get back to where you started its mixed and this prevents overmixing and soggy mushy salad..
actualy I make TUNA salad not just macaroni salad and
to the top mixture I would layer in 2-3 cans drained tuna...
I told you it eats like a meal and there WONT be any left!!! :)
If I take this somwhere everyone wants the recipe and as you can see I dont measure people growl at me for that loll

Prepare a couple of boxes of Kraft Macaroni and cheese, cool and add all of the rest of the stuff you usually do, chop up a tomato and maybe some ripe olives. That would really jazz up your old recipe pretty much!! The cheese helps lots. I also make Kraft Macaroni and cheese and add a batch of homemade tuna salad...the kind with celery and egg. To the Mayo or Miracle whip I usually add a tablespoon or two of mustard (yellow or spicy brown), as well as a tablespoon or two of pickle relish, finely diced celery and onion (to your taste). For those who like spice, I've even added a touch of salsa, finely chopped a few picked jalapenos into it and a few times even added some chopped cooked shrimp (haven't done that when I've added the japalenos or salsa, though it might be interesting to try). Then I hard boil some eggs and slice them on top for garnish. The other thing I like to do with macaroni is use shells and chop raw veggies like carrots, onions, tomatoes, peppers and cucumbers and add them to the macaroni. You can put in sliced black or green olives. I add pepperoni slices and cubed or shreded cheddar cheese and season with italian salad dressing. (11/08/2006)

Is there a difference between Macaroni Salad and Pasta Salad?
If not, then I'd suggest replacing the macaroni with a more colorful noodle that you should find at your local grocer. If nothing else, it adds a lot of color! (11/08/2006)

Do it with an Italian twist-use rotina or other fancy pasta shape, multi-colored preferable and rather than mayo use Italian salad dressing. Add red onion, diced pepperoni or salami, olives, pepperoncini, and the like. (11/08/2006)

use bow tie noodles, chicken or tuna chunks, green pepper chunks cut small, a little bit of onion,canned pimentoes and a squirt of lemon in your mayonaise dressing. decorate with parsley and paprika. (11/09/2006)

Teatimelady you are the best. There is a soul food resturant inmy area that makes Macaroni Salad with that colorful orange look. The taste is so good and i wondered for years how they made it orange looking. Then i tried what you posted and i twas excatly that. It was dead on and the taste was the same. Never knew Mac Salad had so many devoted fans! My recipe is the same, except the following. Sorry, I don't measure too much either!
1)for cheese, I find Velveeta works great, but you have to separate the cubes by hand after you cut them.
2)substitute olive oil for some of the mayo.
3) use about 1/4 to 1/2 tsp of garlic powder, oregano, basil, dry mustard (and also wet mustard)
4) eggs are hard boiled, whites cubed and added, yolks mashed with a bit of mayo and blended in.
5) still trying to match the delicious macaroni salad you buy at Gershon's delicatessen in Schenectady New York. It was thick and creamy. (12/06/2006)

I like macaroni salad but I prefer the thin Kraft macaroni. I cannot find this product except to buy the Kraft Macaroni and cheese and just use the macaroni. Any body know if it is available? (04/01/2008)

I have tasted lots of different mac salads, but my mother (now deceased) made the best! She used large elbow macaroni, Miracle Whip, hard boiled eggs and chopped sweet gherkins. She usually made some with onions and some without because dad liked onion, but she didn't. I loved both versions. I know it sounds simple, but I make it all the time and everyone eats it up!
