I also prepare a dish for my church and it is usually 50-60 people so I know that it is not always an easy task to convert small recipes into large quantities.
I really like the recipe that Pghgirl gave from our ThriftyFun archives but I no longer have a large electric cooker so I have to break down my recipe into smaller amounts.
I like a recipe that I can make in smaller manageable pans (even when I'm cooking in our church kitchen) as they are much easier to handle (seniors only in our kitchen) and the food stays hot for a longer period of time (leave pans in oven on very low until needed).
This recipe may not suit you but it can be made with frozen shredded potatoes or regular potatoes - everyone seems to like it either way.
This recipe is for 10-12 but can easily be doubled for your choice of 5-6 pans or 3 pans. Very easy measurements - scroll down to middle to find quantity of ingredients for using regular potatoes (and further instructions).
Bear Creek Cheddar Potatoe soup is great... you can't go wrong with that!!!
