I am making Jiffy Corn Muffin Mix. If I add 2 eggs will the batter be more cake like? Sometimes I find the corn muffins too dry.

I like adding half a cup of frozen corn and a dollop (about 1 and a half tablespoons) of sour cream to my mix to make it moist- bake about 5 min longer-
Jiffy Corn Muffins -
Ingredients:
1 (8 1/2 ounce) package Jiffy corn muffin mix
1/3 cup milk
1/2 cup water
1 (9 ounce) package of jiffy yellow cake mix
2 eggs
Easy and yummy muffins. They are moist and sweet. Mix each pkg according to the directions on the packages. Combine fill muffin cups 1/2 full. Good luck.
I have added about 2 teaspoons of sugar to Jiffy corn muffin mix.They don't come out dry or bland.
Yeah, don't add more eggs, they'll just be more stiff. For a simple fix add a little oil or yogurt. Creamed corn would also be good if you like it with corn.
I like to spread butter over the top after it is baked along with spreading honey on top of the butter. Family loves it. Mary in Cocoa, FL
We add about 1/4 cup of sugar and 1-2 tablespoons of honey to our corn muffins. I've been trying to replicate the muffins from Famous Dave's but haven't succeeded yet!
I have a great recipe for corn muffins, but it does not use jiffy mix. My recipe also calls for sour cream. I would add 1/4-1/2 cup sour cream to the jiffy recipe by kffrmw88. My recipe from scratch are fluffy and cakey. Adjust sour cream accordingly.
