In meatloaf, eggs are used primarily as binders. There are many recipes that use oatmeal, cracker or bread crumbs, etc. You can search online for recipe possibilities.
I never use egg in my meatloaf - just wheat germ and spices.
I wouldn't leave out the egg. It might not bake up well.
