This is a perfect way to use leftover rice. Add whatever amount you have. Once you try this simple and delicious dessert, you will arrange for leftover rice on purpose!
Preheat oven to 325 degrees F.
Whisk together first 4 ingredients. Add milk, rice, and raisins and stir together. Pour into a lightly greased baking dish. Sprinkle nutmeg and cinnamon over the top. Set baking dish in a pan of hot water (about 2 inches of water is enough) and bake for 1 hour 45 minutes or until a knife inserted in center comes out clean.

Mix 1 cup cooked rice & 2 cups milk. Heat to scalding (not quite boiling). Beat 2 egg yolks w/ 1/2 cup sugar & 1/2 t vanilla until light yellow.
