I am using my crockpot to make a pot roast for the first time. Should the meat be completely covered with liquid?

no, use one can of beer. It is delicious.
DO NOT ADD LIQUID!!!! When you use a crockpot, you don't add any liquid unless you want a soup. The juices from the meat will actually create a liquid for you, which can be made into a gravy. One of the reasons you use a crockpot is the moisture is retained in the crock.
Also, in the crockpot, the veggies take longer to cook than the meat. Put the veggies on the bottom and the meat on top of those. You will have a wonderful meal!
TiP: If you need it to cook just a little faster, put something on the lid that will hold the lid down just a bit and cover the glass to prevent heat loss. I use my OveGloves.
no.. u can have a inch or 2 of water and you`ll be fine..i let mine cook for 6-8 hours without adding more water
I used about a half a cup of brewed black tea in my Crock-Pot when I'm cooking a roast, I layer it with the vegetables on the bottom and then I brown the roast in a skillet on the stove and then I put the roast in the crock pot and it Cooks overnight it is very tender and delicious
No, you can use very little liquid. I season & brown my roast, put vegetables (carrots, celery, onion, potatoes, etc.) in slow cooker, pour one can of beef broth over veggies & add roast. Cover and cook, about 6 hours on low.
FYI - You can bake potatoes with no liquid. Use your slow cooker like an ove.
