For meat sauce: Brown ground beef in olive oil and add the rest of the sauce ingredients to browned meat. Simmer uncovered about 45 minutes, stirring occasionally. Combine above and add salt and pepper to taste. Cook manicotti shells 8-10 minutes until tender (add a little oil to water to prevent sticking). Drain well, rinse, and stuff with cheese mixture. Pour 1/2 tomato meat sauce into 9x13 inch pan and arrange stuffed manicotti in a layer on the sauce and top with remaining sauce. Sprinkle with Romano or Parmesan cheese. Bake at 350 degrees F for 25-30 minutes.
