The bacon lends to the juiciness of the chicken, and the chicken's skin does a phenomenal job of crisping up the bacon. Brushed with some maple syrup as a finisher, this lightly-sweet savoury dish will be a family favourite!
Prep Time: 10 minutes
Cook Time: 70 minutes
Total Time: 1 hour 20 minutes
Ingredients:
- 1 whole chicken
- 10 strips bacon
- salt and pepper
- 2 Tbsp maple syrup
Steps:
- Preheat the oven at 375 F. Pat the chicken dry and place in a roasting pan. Salt and pepper the skin of the chicken all over.
- Lay the pieces of bacon onto the chicken, tucking them in at the curves.
- Place a piece of foil over the chicken and bake for 50 minutes. Remove foil, brush with maple syrup, season with pepper, and cook an additional 10 to 20 minutes until internal chicken temperature registers at 165 F and bacon is crisp.

Now this I have to try - but I may use a Cornish hen instead..
