Silver Post Medal for All Time! 355 Posts This was such a flavor filled meal, though not too heavy. Very easy and quick dinner to prepare.
Ingredients:
- 2 boneless skinless chicken breasts, sliced into long strips
- 1/2 cup Italian dressing with Romano cheese (marinade)
- 4 cloves garlic, sliced
- 1/2 lb Angel Hair pasta
- salt for pasta water
- 1 Tbsp olive oil
- 1 jar Barilla Pesto sauce, heated on low
- 1/8 tsp black pepper
- 1/2 tsp season salt
- 1/2 tsp dried basil
- 8 pkg (8oz) shredded Parmesan cheese
Steps:
- Marinate the chicken strips about two hours before cooking in the refrigerator.
- Put on a pot of water for pasta, and salt it. I put olive oil in the water. When it boils, I break up the angel hair pasta into 4ths add to water and stir it in. Until it is Al Dente.
- Meanwhile in a hot skillet, toss around the chicken strips, garlic slices, black pepper, basil and season salt. Use the marinade also. Until golden brown.
- The pesto is heating in a small saucepan. Strain the Angel hair, put it back in the pot, add the pesto sauce and cover.
- Check the chicken by slicing into the thickest piece for done. Arrange on a dinner plate with the pasta and pesto sauce. Sprinkle a handful of Parmesan cheese over the pasta. And arrange the chicken pieces around it. It was really delicious. Enjoy!

I have never thought about using dressing before as a marinate. I'll have to give that a try sometime, thank you.
