I used this recipe as a springboard. I had the quinoa and dressing ingredients. I substituted other vegetables and cheese for what I didn't have or did not like. I will write the recipe as written.
Quinoa is a complete protein. This salad keeps for several days, and is great for lunch and the upcoming warmer weather.
