Diamond Post Medal for All Time! 1,246 Posts This is one of my family's favourite soups. They love it because it tastes like a loaded taco, and I love it because it's super nutritious. It's loaded with cabbage, which is packed with vitamins and nutrients, and also aids in digestion. If you'd like to get a little fancy, add a little haystack of homemade crisped corn tortilla strips on top!
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
Yield: 8 servings
Ingredients:
- 1 large onion, chopped
- 1 bell pepper, chopped
- 1 carrot, chopped
- 5 cloves garlic, minced
- 2 tomatoes, chopped
- 8 cups cabbage, chopped
- 2 tsp hot sauce
- 2 tsp ground cumin
- 1 tsp oregano
- 4 cups chicken broth
- 4 cups water
- 1 can pinto or black beans
- 1 tsp salt
- 4 corn tortillas, thinly sliced
- 1 bunch cilantro, chopped
- 2 limes
- 1 avocado
- sour cream or Greek yogurt
- cooking oil
Steps:
- Heat some oil in a large pot over medium heat. Add onion, bell pepper, carrot, and garlic. Cook until softened, stirring frequently for about 10 minutes.
- Add tomatoes and cook for 5 minutes, stirring frequently.
- Add cabbage and cook for a few minutes, stirring frequently.
- Add hot sauce, cumin and oregano. Stir and cook for about a minute.
- Add broth, water, beans and salt to the pot. Bring to a boil over high heat, then reduce to low to simmer. Cover partially with a lid and cook for 15 to 20 minutes.
- When the vegetables are softened, stir in cilantro and squeeze in lime juice. Add salt if necessary.
- Fry tortilla strips in a bit of oil in a pan over high heat. Drain on a paper towel.
- Ladle soup into bowls and stack tortilla strips on top. Garnish with cubed avocado and sour cream/Greek yogurt.

Looks and sounds yummy.
A lot of ingredients but still not complicated and what better way to eat healthy "good for you" food.
Have to try this soon.
Does it freeze well?

I haven't frozen this one in particular because it gets eaten up in 2 days usually (even when I make a HUGE batch) but I've made similar ones that have definitely frozen well. Just don't add the toppings before you do so :)

Thanks - I am always dreaming that I will have enough leftovers for another day but does not happen very often.
Good to know about freezing - just in case.
