This is a fun, zesty twist on the usual coleslaw. This is great as a side dish or as a filler for your tacos.
Total Time: 10 minutes
Ingredients:
- 4 cups shredded cabbage
- 2 cups shredded carrots
- 7 to 11 ounces whole corn kernels
- 2 Tbsp lime juice
- 3/4 cup mayonnaise
- 1 Tbsp taco seasoning

Steps:
- Mix all the veggies together in a large bowl.

- Add the lime juice, mayonnaise, and taco seasoning. Add salt and pepper to taste, as all taco seasonings are different. I like to let mine sit in the fridge for a few hours to marinate together, but you can use it straight away.
