My friends and I are absolutely addicted to Mexican fruit salad. It's chock full of mangos, pineapples, apples, and coconuts, topped with a zesty, chili lime drizzle. We originally had them prepared for us at these fruit stands, but we've noticed the prices have absolutely skyrocketed. Now we make our own. This is great because we make it with things we especially like. I love to eat this year round!
You can use any fruit you like. I will often also chop up peeled cucumbers, melons, and jicama for this. It is fantastic to keep covered in the fridge at all times. A smarter choice to pick at when you want something sweet or sour. Such a refreshing delight!
