A Mexican friend served a dish that resembled a meatloaf done like a jelly roll. It appeared to have grated, cooked carrots and mustard inside the meatloaf roll. Can anyone supply a recipe for a dish like this?

I do a jelly-roll style meatloaf. But I use chopped spinach, salt and pepper, and parmesan cheese inside. The spinach keeps the loaf very juicy. My kids even love it! (07/10/2005)

Here's a good jelly-roll meatloaf recipe. Take your hamburger and mix what you normally do to make a regular meatloaf. I use 2 eggs, some oatmeal, onions, 1/2 cup ketchup, and some seasoned breadcrumbs. Then flatten out the hamburger mix. In the middle, put chopped green peppers and mozzarella cheese. Roll up, put in loaf pan, and cook @350 for 40 - 60 minutes, until done. Delicious! (07/12/2005)
