Ingredients:

  1. Preheat oven to 350 degrees F.
  2. Cook spaghetti al dente, according to package directions. Then cut butter into small cubes and toss with spaghetti, set aside.
  3. In a large skillet, add olive oil and diced onions. Then cook onions over medium/high heat, until translucent and softened.

  5. Add ground beef and cook until browned. Drain if necessary.

  7. Add spaghetti sauce and parsley, mixing to combine well. Simmer over low heat for 5 minutes.

  9. In a large bowl, combine sour cream, cottage cheese, and cream cheese. Stir to combine.

  11. In a small bowl, combine mozzarella, cheddar, and Parmesan cheeses.

  13. Add spaghetti to cream cheese mixture and toss until well coated.

  15. Add half of the cheese mixture and stir again.

  17. Place spaghetti mixture into 9 x 13 pan. Add 3/4 meat sauce mixture. Stir to combine.

That recipe is a heart attack waiting to happen. All carbs and fat. Very expensive to make also

My mother used to make that in the 50's and 60's. No spaghetti sauce in those days, but tomato paste. Instead of spaghetti noodles she used the fine Vermicelli, and of course did not use all those cheeses. I remember a thin layer of cottage cheese mixed with Oregano and a sour cream layer mixed with parsley. The meat and onion and fat was on top of the color layers, and covered with a bit of cheese. The result was colorful layers like a fancy cake and very tasty.

We always begged for it, but because we were on a tight budget from building our house, she made it only once month.
Sometimes mom used fresh mushrooms, that we picked, and cut up farmer sausage instead of ground beef. That was even better than with ground beef.
Thanks to the reduction of all the expensive ingredients, the result was firm and did not slump when a triangle was cut out for a serving. Sure was good!

It is all about how often you eat something, portion control, and eating a well balanced meal. It is certainly no worse than many of the foods people eat.

All of these ingredients are frequently on sale and generic work just fine. It was surprisingly inexpensive to make. Plus it makes a lot of servings and can be frozen for future meals. I have a family of 5 and got 3 meals out of it. :)

It makes a great potluck dish too!

Yum, this sounds great! It would be easy to lighten up if people are worried about the cheese. I think my family will love it, although I would have to substitute the ground beef for something else. Maybe mushrooms?
