Diamond Post Medal for All Time! 1,246 Posts This is a fun and delicious way to get use out of stale bread. These mini French toast cups are crispy on the outside and custardy in the center. What's great is they're also super portable if you have a grab-and-go kind of day.
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Yield: 2-3 servings
Ingredients:
- 3 Tbsp sugar
- 1/2 tsp cinnamon
- 4 cups stale bread, ripped or cubed (I used French bread)
- 1/2 cup milk
- 1 egg
- 1 tsp vanilla
- dash salt
- powdered sugar or maple syrup for serving
Steps:
- Preheat oven to 350 F. Mix sugar and cinnamon in a small bowl.
- Grease a 12-cavity muffin tin and sprinkle the bottoms with just a touch of the cinnamon sugar mix.
- Reserve a couple teaspoons of the cinnamon sugar mix. In a large bowl, whisk together the milk, egg, vanilla, salt, and the rest of the cinnamon sugar.
- Pour the bread pieces into the wet mixture and stir around until all the bread is well coated.
- Fill muffin tin cavities with soaked bread pieces.
- Sprinkle the tops with the reserved cinnamon sugar.
- Bake until tops are crisp and golden, about 20 minutes.
