Ingredients:
- 2 eggs
- 2 cups flour
- 1/2 cup milk
- 2 Tbsp butter
- 1/2 cup sugar
- 2 drops vanilla essence
- 2 Tbsp Nesquik
- canola cooking spray
- Coating
- 2 cups icing sugar
- 1/4 cup Nesquik
- 1 Tbsp milk
- a small bowl of sprinkles
Steps:
- Pre heat oven to 180 degrees C (about 350 degrees F) or 170 degrees C fan forced.
- Grease a square medium baking tin with canola cooking spray. Flour it after it is sprayed, making sure the whole tin is floured. This will help the cake not to stick to the tin. Tip excess flour in sink. Set aside.
- Add butter and sugar to the mixing bowl. Mix well, then add egg, flour and milk. Blend for one minute until mixture is smooth, then blend in Nesquik and vanilla essence.
- Pour mixture into the prepared set aside tin and bake for 30 minutes or until slightly golden and skewer pulls out clean. Set aside to cool.
- Cut slices 4 rows across and 2 down. Set aside again on the rack.
- Coating: Mix Nesquik, icing sugar and milk until it's a smooth runny consistency. If it is too thick, add more a tiny more milk at a time until suitable. If too runny, add more icing sugar.
- One at a time, cover cake squares in coating. Use tongs to pull out covered cake and roll into the sprinkles, turning and pressing firmly so sprinkles stick.
- Put lamingtons on a nice cake tray. Lamingtons are now good to go and ready to eat.
Tip: You may use coconut for the true Lamington treat.
