Diamond Post Medal for All Time! 1,246 Posts I love this salad because it's bursting with flavours and colours! The textures are fantastic from the mix of the soft beans and the crunchy pomegranate seeds. This makes for a lovely side dish or full meal.
Yield: 4
Ingredients:
- 1 clove garlic, chopped
- 1 tsp salt
- 1/4 cup olive oil
- 2 Tbsp lime juice
- 2 tsp ground cumin
- ¼ tsp ground cinnamon
- 1 can (15 oz) red kidney beans, rinsed
- 1 can (15 oz) chickpeas, rinsed
- 1 cup shredded chicken
- 1/3 cup pomegranate seeds
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
Steps:
- In a bowl, mix together the garlic, salt, oil, lime juice, cumin and cinnamon. Add the kidney beans, chickpeas, and chicken. Allow to sit for 10 minutes.
- Transfer to a serving platter and top with pomegranate seeds, parsley and mint.
