No "grease" required if using silicone muffin cups, reduce fat content (and animal protein-based fats) by using egg whites, skim-milk parmesan and omit milk entirely. Add vegetable protein with hemp and / or ground flax. Other vegetables (chopped mushrooms, bell peppers, onions, celery) may be added or substituted. An excellent snack and - as you say - quick meal on the go.
