Instant Pot Mushroom and Wild Rice Soup

A bowl of mushroom and wild rice soup cooked in an Instant Pot pressure cooker.If you have recently gotten an Instant Pot, you might enjoy making this soup. It was very easy to make and turned out great. This is a vegetarian version but I'm definitely going to make one with beef broth and meat. It would be like a Stroganoff soup. Yum!

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour 15 minutes

Yield: 8 servings

Ingredients:

  • 1 cup wild rice
  • 1 medium onion, diced
  • 3-4 cloves garlic, minced
  • 6-8 button mushrooms, diced
  • 5 medium carrots, diced
  • 1 red bell pepper, diced
  • 4 cups vegetable broth
  • fresh thyme, rosemary and sage
  • salt and pepper, to taste
  • yogurt or sour cream (optional)

This is a vegetarian soup. If you prefer using beef or chicken stock, it would be just as delicious. You could also add in chicken or beef to make it more hearty, just sauté the meat in butter or oil before adding the rest of the ingredients into the pressure cooker.

I also generally use celery in any type of cooking with carrots and onions. I didn't have any on hand but a couple of stalks would add a nice additional flavor to the soup.

Steps:

  1. Rinse and chop fresh herbs. Reserve some to sprinkle on the finished soup, if desired.
  2. Fresh herbs for Mushroom and Wild Rice Soup.
     
  3. Dice all the vegetables and place them in the pressure cooker's pot with the rinsed rice and herbs.
  4. All the soup ingredients placed in the Instant Pot.
     
  5. Add broth and stir all the ingredients together. Salt and pepper, according to your personal taste.
  6. All the soup ingredients stirred together in the Instant Pot.
     
  7. Place lid on pot and cook under pressure for 45 minutes. This will take an additional 15 or so to get to pressure, so plan for an hour cooking time.

  9. When the soup is done, taste it and add salt, pepper or other spices as needed.
  10. The finished pot of wild rice and mushroom soup, before serving.
     
  11. Serve with a spoonful of Greek yogurt or sour cream, and sprinkle herbs on top.
  12. Adding yogurt to the mushroom and wild rice soup.
     

If you don't have an Instant Pot, you can easily make the same recipe on the stove or in a slow cooker. Just cook until the rice is done and the vegetables are soft.

Please, please keep those simple instant pot recipes coming. Im adding some cream of mushroom soup and extra liquid because i dont have mushrooms. Thanks. Karen h.

Sounds great! Soup recipes are tricky for me to write down because I'm always modifying things or adding different ingredients.
