I am going to see my mother-in-law who lives in a nursing home in Indiana at the end of May, first of June and I am wanting to make a nice snack for the residents using oatmeal. I usually try to take some sort of a snack for the residents when we visit. I try to make it somewhat healthy being that so many have dietary limitations, but does not necessarily have to be every time we go.

This site has a great oatmeal cookie that I use to send to the troops at the front. I would send care packages once a month and these were a favorite. I would use chopped up raisins or cranraisins instead of chips (they don't do well in warm weather). They were still soft by the time they got there. Adding some chopped walnuts works too.
These taste good, have no items that are "unhealthy" and travel well.
1 c oatmeal
2 ripe bananas, mashed
hand full of your choice - chocolate chips, raisins, dried cranberries (craisins) or chopped nuts.
Mash bananas and oatmeal together. Add your choice (for patients I would avoid nuts in case of nut allergies also they are hard to chew).
Drop by spoonful on to greased baking sheet (or roll into balls and press). These do not expand - what you put down is what you get.
Bake at 350 degrees for 15 min.
Makes 18. (Very easy to double or triple the recipe.)
These are very moist and healthy. No salt or baking soda for people with sodium restrictions. No eggs for people with egg allergies. No flour for people who have gluten allergies. Plenty of potasium and fiber.
For travel I just separate layers with wax paper.
