Use Italian Seasoning, instead of just basil. My family loves roasted potatoes! You can change seasonings depending on the meat you're serving with potatoes.
Ex: Chicken: use Marjoram & Sage
Beef, use Rosemary; stir in a splash of Worcestershire Sauce
Try with seasonings you like.

Although it is a "no no" nowadays, my mother always prepared these with lard.
We still do it at least once a year (maybe Christmas or Easter) - comfort food and remind us of Ma. They are delicious!
I throw them into a zip-close bag, add my spices/herbs and some olive oil, scrunch them around and pour onto the cookie sheet. Easy peasy and throw the bag away! You don't have the peel the potatoes if you don't want to, the skin gets crispy.
