Gold Post Medal for All Time! 677 Posts This is a moist muffin perfect for breakfast or a snack. I used whole wheat flour and brown sugar Truvia. I also used whey instead of milk. This is a perfect way to use up bananas.

Ingredients:
- 2 cups flour
- 1/2 cup brown sugar
- 1 Tbsp baking powder
- 1/4 tsp salt
- 1/2 cup peanut butter
- 2 Tbsp oil
- 2 eggs
- 3/4 cup milk
- 2 ripe bananas, mashed
Steps:
- Preheat oven to 375 degrees F.
- Mix together the flour, sugar, baking powder and salt.
- In another bowl, beat together the peanut butter, oil, eggs, milk and bananas.
- Stir the wet ingredients into the dry ingredients and mix just until moistened.
- Divide evenly between 12 muffin cups.
- Bake for 20 to 25 minutes, or until a toothpick comes out clean.
- Cool on a wire rack.
