Peanut Butter Cookie Cups

Yield: 24 cookie cups

Ingredients:

• 1 cup all-purpose flour
• 1 tsp baking soda
• 1/8 tsp salt
• 1/3 cup sugar
• 1 egg
• 1 tsp vanilla
• 1/2 cup chunky peanut butter
• 1 1/2 Tbsp softened butter
• 1 Tbsp whole milk
• 24 mini peanut butter cups

Steps:

1. Heat oven to 350 F. Whisk together the flour, baking soda, and salt.

 
2. In another bowl, mix together sugar, egg, and vanilla.

 
3. Beat in peanut butter and softened butter until smooth.

4. Whisk in the milk.

 
5. Fold the flour mixture into the peanut butter mixture until well combined.

 
6. Lightly grease a mini muffin tin and press the dough into each cup about 2/3's of the way up. Bake in preheated oven for 12 minutes.

 
7. Using 2 fingers, immediately press a peanut butter cup into middle of each cookie. Bake for another 2 minutes, then remove and cool on a rack.

8. Serve when cooled. Enjoy the beautiful peanut butter cup center!
