You may have noticed a recipe for super easy peanut butter cookies. The recipe calls for just 3 ingredients, egg, peanut butter, and sugar. Well, I tried this recipe on the recommendation of my dear friend, Beverly, and it is outstanding! Actually, outstanding is a quote from a friend who had just eaten one. Everybody who tried them said they were excellent, some said the best peanut butter cookies they had ever tasted. I think they are the best myself, and so easy it's crazy!
If you have seen the recipe, but not tried it, give it a go. It has been posted on TF before, but here is the recipe:
Mix 1 lightly beaten egg, 1 cup sugar, and 1 cup peanut butter. When well mixed, take a tablespoon or so of dough, roll it around in your hand, and put it on a lightly greased baking sheet. Press down with a fork.
Bake in a 350 degree F oven for 8 - 10 minutes. They are out of this world, and noone will ever guess that they are so easy. As a real plus, they are also gluten free.
Source: I've seen this recipe in several places over the years. I don't know it's origin. it certainly wasn't me, though I wish I could take credit.

These are also fabulous if after you roll them into balls, place a chocolate candy kiss or chocolate drop candy into the middle of them. Bake and then serve. They are melt in your mouth fantastic.
I used a bit less sugar and they were just as good. Thanks for posting as it is quick and easy.
