Ginger roots have such weird shapes that using a knife or vegetable peeler to remove the skin can cause you to take off too much of the actual meat, making for lots of waste. The skin is delicate enough for you to gently scrape at it with a dull spoon. Just put the edge of a spoon at a diagonal angle on the root and pull the spoon down towards you. The skin will gently scrape off, not taking away any of the ginger meat.
