Peeling Hard Boiled Eggs?

When I peel hard boiled eggs the shell comes away with some of the white and looks awful, how can I stop this happening? I have tried peeling in cold water and hot and rolling the egg first, but nothing seems to work. The shell just goes brittle and comes off in little bits.

1. Place eggs in pan and cover with water; add a generous teaspoon salt. Boil to your preference. I prefer well done so I gently boil about 8-10 minutes.

2. Remove from heat, drain and run cold water over them until they cool.

3. Roll gently to loosen all the shell and just peel away.

*if you prefer, you can skip step 3 and just put in the fridge until you feel like peeling them later. :0)

1: Take your raw eggs and stick them in a pot with enough cold water to cover them (I say cold because I'm assuming your eggs were in the fridge, if not, room temperature water is fine).

2: Put your pot on the stove (uncovered) and put the heat on high.

3:When the water is boiling (not starting to bubble, actually boiling), turn the heat off and put the lid on (Don't take the pot off the heating element even though it's been turned off).

4:Now, when the pot has simmered down from the boil (about 5 minutes or longer if you want the eggs really cooked), pour out the hot water and run the eggs under cold water right away for a minute to shock them.

5:Peel away. Shell will come off in big chunks

Eggs are hard to peel when they haven't been boiled properly and if they haven't been shocked with cold water. You have to pierce that membrane that is under the shell to peel smoothly. Shocking helps make this membrane stick to the shell so it peels away instead of sticking to the egg white itself.

Also, don't tap cooked eggs against a hard edge. The edge of a bowl for example will push the shell into the egg white when you crack it. Crack it against the counter lightly.

Try peeling the eggs under cold running water or holding them in cold water while peeling.

Never use fresh eggs for hard boiled eggs. Use eggs that are two weeks old or older. The shells will peel off easily, when you do this.

Put hard boiled eggs in cool water, after cracking on flat surface. The water will seep into the cracks loosening the eggs from their shell.

Just toss a pickle slice into the water when boiling them. Boil them for not longer than 10 minutes and then let them cool down.

Also older eggs make better hard boiled eggs than those that are fresh, or newly laid.
