I bought a couple of Costco rotisserie chickens the other day and made a big pot of chicken stock. I had plenty of meat for chicken soup so I decided to try something new with the extra. It turned out great. I used a whole wheat tortilla but bread or a roll would have been just as good. If you have leftover turkey from Thanksgiving, it would probably be a nice change from the classic turkey sandwich
Ingredients:
- 1 cup pesto (store bought or homemade)
- 2 cups chopped cooked chicken
- 1/2 red onion, chopped
- 3 stalks celery, chopped
- 2 Tbsp. mayo, or to taste
- salt and pepper
- lettuce
- bread, wraps or tortilla
Directions:
Mix together chicken, pesto, onion, celery and mayo to a creamy consistency. Spread on bread, tortilla or wrap and add a lettuce leaf.
This would also be good with crackers or just as a salad. I was tempted to add tomatoes (which go so well with pesto) or fruit such as grapes or pears but I left this one as is. I may have it for lunch again tomorrow!
